Big Ol’ Zucchini

We planted zucchini this year, but it succumbed to squash borers or cutworm or something before we could enjoy it.  Fortunately, we have wonderful neighbors who shared some of their garden bounty with us. Thanks, neighbors…we like you!

Weighing in at just over two pounds, this zucchini yielded six cups shredded – three times the amount needed to make two loaves of this wonderful zucchini bread from Smitten Kitchen.  (The recipe says chocolate chips are optional, but I highly recommend using them.)

    chocolate chips should never be optional.

    I saw this recipe the other day and thought it looked super easy and yummy. Greek Zucchini and Herb Pie. I was thinking I would add in some tomatoes and maybe serve it with a cucumber/yogurt sauce. mmmm I’m hungry:

    If you think that zucchini was big, wait till you see how big our kids grow…I’ve been making Eli drink miracle grow weed and feed. Sure, he throws up a lot and complains of “gastric decompression” (kids use such funny words to describe a sensi-poo tum tum!) but he’s green, leafy, and not a weed on him! Sure, it’s not an organic way to grow your kids, but look at the results!
